Refreshing Watermelon Sherbet

3 cups watermelon juice
1/2 cup sugar
1/8 teaspoon salt
1 envelope unflavored gelatin
Juice of 1 lemon

To make watermelon juice, force the watermelon pulp through a food mill or sieve. It takes about one fourth of a good sized watermelon to make 3 cups of juice.

Mix first 3 ingredients. Remove about 1/4 cup of juice to a small saucepan. Add gelatin to soften in the 1/4 juice in saucepan. Dissolve over a very low heat on the stove while stirring. When the gelatin is dissolved put back into the first mixture and add the lemon juice and stir until well mixed. Freeze in a crank-type freezer.

Makes about 1 quart
