A Recipe From Barbara

Spiced Chicken Breasts

This is an excellent supper dish especially when served with buttered noodles.

3/8 cup butter
2 tablespoons clear honey
1 garlic clove, minced
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon black pepper
4 chicken breasts, skinned and boned
3 tablespoons sesame seeds
Vegetable oil spray

Preheat the oven to 400*

In a large frying pan, melt the butter over low heat. Add honey, stirring constantly and cook for 3 minutes. Add the garlic, ginger, salt and pepper.

Increase heat to medium and add the chicken breasts. Fry for 4 minutes on each side or until the chicken breasts are golden brown all over.

Put chicken into an ovenproof baking dish sprayed with a vegetable oil. Sprinkle the sesame seeds over the chicken . Pour the cooking juices from the frying pan over the chicken in the baking dish.

Cook for about 30 minutes or until the chicken is tender and the juices run clear when it is pierced with the point of a sharp knife.

Remove the dish from the oven and serve immediately.
