Pumpkin Salad

1/2 cup mayonnaise
1 teaspoon lemon juice
1 teaspoon brown sugar
1 tablespoon milk
12 ounces of pumpkin flesh, finely chopped
2 apples, (Granny Smith’s give a really great flavor), cored, and diced
4 celery stalks, sliced thinly
3 tablespoons walnuts, chopped
1/2 cup raisins or dried cranberries

Place mayonnaise, lemon juice, sugar and milk in a medium mixing bowl and whisk until this is smooth. Stir in the rest of the ingredients and mix well. Cover the salad and chill in the refrigerator for about 30 minutes.

Serves 4

This is a very simple salad to prepare and is great with cold meats and poultry.
