Pumpkin Nut Waffles

2 1/2 cups sifted cake flour
2 teaspoons baking powder
1 teaspoon salt
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger 3 eggs, separated
1 3/4 cups milk
1/2 cup vegetable oil
1/2 cup pumpkin
3/4 cup chopped pecans

Sift together dry ingredients in a medium bowl.

Beat eggs yolks in a large bowl. Add the milk, vegetable oil, and pumpkin and mix well. Stir in the dry ingredients then mix until smooth.

Beat your room temperature eggs until they are stiff. Fold the egg whites into your batter.

Pour your batter on a hot waffle iron. Sprinkle with a few chopped nuts and bake.

These are great with warmed maple syrup and served with sausages.

Makes about 8 waffles.
